  • 1/4 cup lemon curd
  • 150 gram packet sweet shortcrust pastry cases (6 cases)
  • 6 mini vanilla meringues, crushed
  • 1/2 punnet raspberries

    In a small mixing bowl, using an electric mixer. beat cream until soft peaks form. Fold through curd.

    Spoon cream mixture evenly among tartlet cases. Top with crushed meringues and raspberries.
