Lemon meringue raspberry tarts
- 1/2 cup thickened cream
- 1/4 cup lemon curd
- 150 gram packet sweet shortcrust pastry cases (6 cases)
- 6 mini vanilla meringues, crushed
- 1/2 punnet raspberries
Method
Lemon meringue raspberry tarts

1In a small mixing bowl, using an electric mixer. beat cream until soft peaks form. Fold through curd.

2Spoon cream mixture evenly among tartlet cases. Top with crushed meringues and raspberries.
