Lemon polenta biscuits
Sweet, golden and crumbly, these beautiful lemon zest polenta biscuits are brilliant enjoyed with a mug of coffee or tea for a morning or afternoon treat.

Ingredients
Lemon polenta biscuits
- 250 gram butter
- 1 teaspoon vanilla essence
- 1 1/4 cup (200g) icing sugar mixture
- 2 tablespoon grated lemon rind
- 1/2 cup (85g) polenta
- 2 1/2 cup (375g) plain flour
- 1 tablespoon lemon juice
Method
Lemon polenta biscuits

1Preheat the oven to 200°C. Lightly grease oven trays.

2Beat butter, vanilla, sugar and 2tsp of the rind in a small bowl with an electric mixer until well combined.

3Stir in polenta, then sifted flour in two batches until combined. Stir in lemon juice.

4Knead dough gently on a floured surface until smooth. Divide in half and shape halves into two 20cm triangular logs. Cover and refrigerate for about 2 hours or until firm.

5Cut logs into 1cm slices. Place triangles about 2cm apart on prepared oven trays. Sprinkle with remaining lemon rind.

6Bake in a moderately hot oven, about 15 minutes, or until browned lightly. Stand for 5 minutes before transferring to a wire rack to cool.
