Lime and berry friands
These little lime and berry friands may be tiny, but they're absolutely bursting with flavour.

Ingredients
Lime and berry friands
- 3 egg-whites
- 90 gram unsalted butter, melted
- 1 teaspoon finely grated lime rind
- 1/2 cup (60g) almond meal
- 3/4 cup (120g) icing sugar, plus 1 tablespoon extra
- 1/4 cup (35g) plain flour
- 1/3 cup (50g) frozen blueberries
Method

1Preheat oven to 180°C (160°C fan-forced). Grease two 12-hole (1-tbsp/20ml) mini muffin pans.

2In a medium bowl whisk egg-whites until frothy. Stir in butter, rind, almond meal and sifted icing sugar and flour.

3Drop heaped teaspoons of mixture into each muffin pan hole; top each with a blueberry.

4Bake about 10 minutes. Stand friands in pans 5 minutes; turn onto wire rack to cool.

5Dust with extra sifted icing sugar.
