Macaroni cheese pots
  • 1 cup (150g) macaroni
  • 1 carrot, diced
  • 20 gram butter
  • 1 tablespoon plain flour
  • 1 1/4 cup (310ml) milk
  • 1/2 cup (60g) grated cheese
  • 100 gram shaved ham, diced
  • 6 button mushrooms, sliced
  • 125 gram can corn kernels, drained

    Preheat oven to 200°C or 180°C fan. Lightly grease four 1 1/4-cup ovenproof dishes. Cook macaroni in a saucepan of boiling water according to packet directions. Add carrot 3 minutes before end of cooking time. Drain.

    Meanwhile, melt butter in a saucepan on medium heat. Add flour and cook for 2 minutes, stirring. Remove from heat and slowly whisk in milk.

    Stir on medium heat until sauce thickens and is smooth. Stir through half of cheese, until melted. Remove from heat. Add macaroni, carrot, ham, mushroom and corn. Season to taste.

    Spoon into prepared dishes and scatter with remaining cheese. Bake for 20 minutes, until bubbling and golden. Serve immediately.
