Macaroni cheese with tomato and basil
  • 2 cup macaroni
  • 1 1/2 cup grated mozzarella
  • 1 cup thickened cream
  • 2 eggs, lightly beaten
  • 2 tomatoes, sliced
  • 1 cup fresh breadcrumbs
  • 1/2 cup basil leaves

    Preheat oven to moderate, 180°C. lightly grease a 25cm square casserole dish.

    Cook macaroni in a large saucepan of boiling, salted water for 10-12 minutes or until tender. Drain well.

    Meanwhile, in a bowl, combine 1 cup mozzarella with the tasty cheese, cream and eggs. Season to taste. Add macaroni and stir to combine. Pour into prepared casserole dish.

    Arrange tomato slices over the macaroni. Top with the combined breadcrumbs and remaining mozzarella.

    Bake for 20-25 minutes or until golden, scatter over basil leaves and cut into squares. Serve with salad, if desired.

Notes

For added flavor, reduce the mozzarella to 1 cup and add 1/2 cup parmesan. You could also whisk in 1-2 teaspoons Dijon mustard with the cream.
