Ingredients

Mango and lime loaf
  • 1 cup self-raising flour
  • 3/4 cup plain flour
  • 1 teaspoon ground ginger
  • 3/4 cup brown sugar
  • 185 gram melted butter
  • 2 eggs
  • 1 lime, grated zest (juice reserved for icing)
  • 2 mangoes, seeded, peeled, chopped, plus 1 extra, sliced
Icing
  • 1 1/2 cup sifted icing sugar
  • 1 tablespoon reserved lime juice
  • 1/2 cup toasted flaked coconut, to serve

Method

Mango and lime loaf

    Preheat oven to moderate, 180°C. Lightly grease and line a 10cm x 20cm loaf pan with baking paper.

    Sift flours and ginger together into a large bowl. Stir in sugar. Lightly fold in combined butter, eggs and zest, then fold in mango. Spoon into pan, smoothing surface.

    ICING: In a bowl, combine icing sugar and enough juice to make a spreadable consistency. Spread over cooled loaf. Top with fresh mango slices and toasted coconut.

Notes

Loaf is cooked when a skewer inserted into the centre comes out clean.
