Marinated tofu and bok choy stir-fry

Ingredients

Tofu and bok choy stir-fry
  • 350 gram firm tofu, drained, cut into 2cm cubes
  • 2 teaspoon peanut oil
  • 1 large white onion (200g), sliced thinly
  • 1 large red capsicum (200g), sliced thinly
  • 200 gram snow peas, trimmed
  • 1/4 cup (60ml) vegetable stock
  • 400克白菜,
  • 420 gram thin fresh egg noodles
Marinade
  • 1/4 cup (60ml) hoisin sauce
  • 1 tablespoon soy sauce
  • 1/4 cup (60ml) oyster sauce
  • 1 teaspoon grated fresh ginger
  • 2 clove garlic, crushed

Method

    To make marinade: combine ingredients in small bow and mix well.

    Heat oil in wok or large frying pan and stir-fry onion and capsicum until tender. Add peas and stock, cook, stirring, until hot.

    Add bok choy, noodles and undrained tofu to wok and stir until hot.
