  • 1 kumara (400g), diced into 2.5cm pieces
  • 24 shallots (600g)

  • 1 teaspoon finely chopped fresh rosemary
  • 350 gram piece beef sirloin steak, trimmed
  • 1 egg yolk
  • 2 teaspoon dijon mustard
  • 125 gram butter, melted
  • 1 tablespoon white wine vinegar
  • 1 tablespoon finely chopped fresh chives
  • 24 baby spinach leaves, trimmed

    Preheat oven to moderately hot (200°C/180°C fan-forced).

    Combine kumara, shallots, garlic, oil and rosemary in medium baking dish; roast, uncovered, about 20 minutes or until just tender.

    Cut beef into 24 cubes. Thread beef, shallots and kumara onto skewers. Cook, in batches, on heated oiled grill plate (or grill or barbecue) until beef is cooked as desired.

    Meanwhile, peel garlic; blend or process with egg yolk and mustard until smooth. With motor operating, add hot butter in thin, steady stream; process until sauce thickens. Pour sauce into small jug; stir in vinegar and chives.

    Thread spinach leaves onto skewers; serve with garlic butter sauce.
