Ingredients
Meatball wraps
- 250 gram lean beef or lamb mince
- 1 small carrot, coarsely grated
- 1/4 cup dried bread crumbs
- 2 tablespoon parsley, chopped
- 1 egg, lightly beaten
- 1 tablespoon tomato sauce
- 4 mountain bread or lavash bread
- 2/3 cup hummus
- 2 cup lettuce, shredded
- 1 small red capsicum, seeded, thinly sliced
- 1 cup tasty cheese, grated
Method
Meatball wraps

1Preheat oven to moderate, 180°C. Line a baking tray with baking paper.

2In a bowl, combine mince, carrot, breadcrumbs, parsley, egg and tomato sauce. Season to taste.

3Mould tablespoonfuls of mince mixture into balls. Place on prepared baking tray. Bake for 15-20 minutes or until golden and cooked through. Drain on paper towel.

4Spread bread with hummus. Top with lettuce, capsicum, cheese and halved meatballs. Wrap in plastic wrap and chill. Pop in an airtight lunch box when ready to go.
