Mediterranean smash

The perfect side dish for roast meats and barbecues, this mediterranean smash has tender potatoes, olives, garlic and basil.

Ingredients

  • 1/3 cup olive oil
  • 1/4 cup shredded fresh basil
  • 3 crushed garlic cloves
  • 1/3 cup sliced seeded kalamata olives
  • 1/4 cup shredded fresh basil, extra

Method

    Preheat grill.

    Boil potatoes until tender; drain. Place on oven tray; grill until browned.

    Combine olive oil, extra basil and garlic in a small saucepan; cook over low heat 15 minutes. Strain.

    Smash potatoes in large bowl with strained basil oil. Stir in olives and shredded fresh basil.
