- 1/3 cup olive oil
- 1/4 cup shredded fresh basil
- 3 crushed garlic cloves
- 1/3 cup sliced seeded kalamata olives
- 1/4 cup shredded fresh basil, extra
Method

1Preheat grill.

2Boil potatoes until tender; drain. Place on oven tray; grill until browned.

3Combine olive oil, extra basil and garlic in a small saucepan; cook over low heat 15 minutes. Strain.

4Smash potatoes in large bowl with strained basil oil. Stir in olives and shredded fresh basil.
