Golden Mediterranean toasted roll packed with semi-dried tomatoes, marinated chargrilled capsicum, Spanish salami and crumbled goat�s cheese makes a perfect quick and delicious lunch.

Ingredients

Mediterranean toasted roll
  • 1 tablespoon basil, cashew and parmesan dip
  • 3 slices shaved spanish salami
  • 100 gram sliced char-grilled capsicum
  • 2 tablespoon chopped semi-dried tomato
  • 30 gram crumbled goat cheese
  • 1/4 cup baby spinach leaves

Method

Mediterranean toasted roll
  • 1
    Preheat a sandwich press. Spread 1 tablespoon basil, cashew and parmesan dip over base of a split turkish roll.

    Top with spanish salami, capsicum, semi-dried tomato, goat cheese and baby spinach leaves.

    Close roll and toast for 2-3 minutes, until golden and crisp.

Notes

Alter fillings as desired - try ham, brie, cranberry sauce and rocket, or wholemeal sour dough bread with smoked chicken slices, cranberry sauce, baby spinach leaves and grated mozzarella cheese. Wrap unsliced and toast at work.
