Ingredients
Melon salad with lime syrup
- 1/4 medium_piece (1.5kg) watermelon
- 1/2 large_piece (1.3kg) rockmelon
- 1/2 large_piece (900g) honeydew melon
Lime syrup
- 1/3 cup (75g) firmly packed brown sugar
- 2 teaspoon lime rind, finely grated
- 1/4 cup (60ml) lime juice
- 1/3 cup (80ml) water
Method
Melon salad with lime syrup

1Make lime syrup. Stir ingredients in small saucepan over low heat until sugar dissolves, cool 15 minutes.

2Meanwhile, remove skin and seeds from melons, cut into chunks.Combine melons with lime syrup in large bowl, toss to coat in syrup.
