Ingredients

Mince stir-fry with glass noodles
  • 250 gram glass or bean thread vermicelli noodles
  • 2 teaspoon peanut oil
  • 3 clove garlic, crushed
  • 5 green onions (shallots), sliced diagonally
  • 400 gram lean beef mince
  • 1胡萝卜碎
  • 2 tablespoon chilli bean sauce
  • 2 tablespoon soy sauce
  • 1 cup coriander leaves

    Prepare noodles according to packet directions; drain and set aside.

    Meanwhile, heat oil in a wok on high; stir-fry garlic and half green onion 1 minute. Add beef mince; stir-fry 4 minutes, until brown and cooked through. Add carrot, sauces and half of coriander; bring to boil.

    Divide noodles between serving bowls; spoon over beef mixture. Top with remaining green onion and coriander to serve.
