Mini apple pies
Quick, easy and packed full of sweet, juicy apples, these individual golden pies are beautiful for a fast dessert. Serve with a dollop of fresh cream to delight your family and friends.

Mini apple pies
- 1 1/4 cup plain flour
- 1/3 cup caster sugar, plus extra to serve
- 1/4 cup almond meal
- 125 gram cold butter, chopped
- 1 egg
- 1 tablespoon water
- 400 gram can pie apple
- 1 teaspoon mixed spice
- cream, to serve
Method
Mini apple pies

1Sift flour into a large bowl. Stir in sugar and almond meal. Rub in butter, using fingertips, until mixture resembles breadcrumbs.

2Add egg and enough water to form a firm, pliable dough. Knead lightly. Form into a ball. Wrap in plastic wrap. Chill 30 minutes.

3To making filling: in a bowl, combine apple and spice. Set aside.

4Preheat oven to hot, 200°C (180°C fan-forced). Lightly grease each recess of a 12-hole muffin pan.

5Roll out 2/3 of pastry between 2 sheets baking paper until 0.5cm thick. Using an 8cm cutter, cut 12 circles from pastry. Ease into recesses. Trim edges. Prick bases with a fork. Bake 10 minutes. Cool slightly and spoon filling into each case.

6Grate or crumble remaining pastry over pies. Sprinkle with extra sugar. Bake 20-25 minutes, until cooked and golden. Serve pies warm with cream.
Notes
Add 1/2 cup sultanas to pie apple, if liked.
