Mini caesar salads in crispy cases
To save time, bread cases can be prepared a day in advance and stored in an airtight container.

Ingredients
- 1 loaf sliced sandwich bread
- 1/4 cup olive oil
- 1/2 small iceberg lettuce, shredded
- 4 rashers bacon, grilled or pan-fried and chopped
- 5 eggs, hard boiled
- 1/3 cup caesar dressing
- 1/3 cup shaved parmesan
Method

1Preheat oven to 180C. Cut crusts from bread and roll slices with a rolling pin to flatten. Brush or spray with olive oil, then gently press them into mini muffin pans.

2Bake bread cases for 5 to 10 minutes until crisp and just golden. Cool on a wire rack.

3Fill each case with lettuce, then scatter with bacon. Quarter eggs and divide amongst bread cases. Drizzle with dressing and top with shaved parmesan.
