Mini caesar salads in crispy cases

To save time, bread cases can be prepared a day in advance and stored in an airtight container.

Ingredients

  • 1 loaf sliced sandwich bread
  • 1/4 cup olive oil
  • 1/2 small iceberg lettuce, shredded
  • 4 rashers bacon, grilled or pan-fried and chopped
  • 5 eggs, hard boiled
  • 1/3 cup caesar dressing
  • 1/3 cup shaved parmesan

Method

    Preheat oven to 180C. Cut crusts from bread and roll slices with a rolling pin to flatten. Brush or spray with olive oil, then gently press them into mini muffin pans.

    Bake bread cases for 5 to 10 minutes until crisp and just golden. Cool on a wire rack.
  • 3
    Fill each case with lettuce, then scatter with bacon. Quarter eggs and divide amongst bread cases. Drizzle with dressing and top with shaved parmesan.
