Ingredients
Mixed baby leaves
- 200 gram mixed leaves
- 1 avocado, seeded and sliced
- 3/4 cup fresh peas, blanched
Lemon vinaigrette
- 2 tablespoon extra virgin olive oil
- 2 tablespoon lemon juice
- 1 teaspoon seeded mustard
Method
Mixed baby leaves and lemon vinaigrette

1Combine mixed leaves, avocado and peas in a serving bowl.

2Whisk together all vinaigrette ingredients. Season to taste. Pour over salad leaves and toss.
