Ingredients

Mixed baby leaves
  • 200 gram mixed leaves
  • 1 avocado, seeded and sliced
  • 3/4 cup fresh peas, blanched
Lemon vinaigrette
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon seeded mustard

Method

Mixed baby leaves and lemon vinaigrette

    Combine mixed leaves, avocado and peas in a serving bowl.

    Whisk together all vinaigrette ingredients. Season to taste. Pour over salad leaves and toss.
