Ingredients
Mixed beans with leek and almonds
- 200 gram yellow butter beans, trimmed
- 200 gram green beans, trimmed
- 2 cup (300g) frozen broad beans
- 200 gram snowpeas, trimmed
- 1 tablespoon oil
- 1 small leek, thinly sliced
- 2 clove garlic, sliced
- 2 tablespoon slivered almonds
Method
Mixed beans with leek and almonds

1Blanch all beans with snowpeas in a large saucepan of boiling, salted water. Cool in iced water and drain. Remove and discard broad bean skins. Slice snowpeas diagonally.

2Heat oil in a wok on high. Stir-fry leek, garlic and almonds 3 minutes, until soft. Add beans and snowpeas and stir-fry gently 1-2 minutes, until heated through.
