Mixed berry crumble with almond praline
  • 300 gram mixed frozen berries
  • 6 ripe pears, peeled, cored, chopped
  • 810 gram can plums, drained
  • 1 teaspoon vanilla extract
  • 2 tablespoon caster sugar, plus 3/4 cup (165g) extra
  • 2 tablespoon cornflour
  • 1/3 cup (75g) firmly packed brown sugar
  • 1/3 cup (50g) plain flour
  • 2 tablespoon self-raising flour
  • 80 gram unsalted butter, cold, cubed
  • 1/3 cup (55g) blanched almonds
  • vanilla ice-cream, to serve

    Preheat oven to 180°C or 160°C fan. Grease six 300ml ovenproof dishes.

    Combine fruit, vanilla, caster sugar and cornflour in a bowl. Spoon into prepared dishes.

    Place brown sugar, plain flour and self-raising flour in a bowl. Using fingertips, rub in butter until mixture resembles coarse breadcrumbs. Scatter over fruit mixture to cover. Bake for 30-35 minutes, until golden and bubbling.

    Meanwhile, line a baking tray with foil. Scatter over almonds and bake for 5-8 minutes, until lightly toasted.

    Heat extra sugar and 1/3 cup water in a small pan on low, stirring until dissolved. Increase heat to medium and bring to boil. Boil, without stirring, for 5-8 minutes, until light caramel. Remove from heat and let bubbles subside. Pour evenly over almonds. Stand for 10 minutes, until set.

    Roughly chop praline. Scatter over crumble and serve with ice-cream.
