Mixed mushroom and mozzarella pizza
Mushroom fans will devour this garlic-infused pizza topped with caramelised onion. Mozzarella cheese melts beautifully into the crust contributing a sweet, mild earthly taste.

Ingredients
Caramelised onion
- 60 gram butter
- 1 tablespoon oil
- 2 red onions, thinly sliced
- 2 tablespoon brown sugar
- 1 tablespoon balsamic vinegar
Mixed mushroom and mozzarella pizza
- 1 long turkish bread, halved
- 6 slices prosciutto, chopped
- 2 tablespoon olive oil
- 500 gram mushrooms, sliced (see tip)
- 2 garlic cloves, finely chopped
- 150 gram mozzarella, thinly sliced
- 60 gram rocket leaves
Method

1Preheat oven to hot, 200°C. Line an oven tray with foil.

2CARAMELISED ONION: Heat butter and oil in a large frying pan on medium. Saute onion for 8-10 minutes, until very tender. Stir in sugar and vinegar. Cook, stirring, for a further 10 minutes until caramelised. Season to taste.

3Place Turkish bread halves on a prepared tray(cut-side up). Spread evenly with caramelised onion and prosciutto slices.

4Heat oil in a large frying pan on high. Saute mushrooms and garlic for 4-5 minutes, until tender. Spoon over base.

5Top with mozzarella. Bake for 5-10 minutes, until cheese melts and base is crisp. Serve topped with rocket leaves.
Notes
We used a combination of button and Swiss brown mushrooms in this recipe. If liked, use two round Turkish bread and split to make individual pizzas.
