Moist apple and date cake
- 2 apples, finely chopped
- 1 cup chopped dates
- 1/2 teaspoon bicarbonate of soda
- 1 cup boiling water
- 185 gram butter
- 1 cup caster sugar
- 1 egg
- 2 cup plain flour
Method
Moist apple and date cake

1Grease a 23cm square slab pan, line base and sides with paper; grease paper well. Preheat oven to 160°C.

2Combine apples, dates, soda and water in bowl, cover, cool.

3Cream butter and sugar in small bowl with electric mixer until light and fluffy, then beat in egg. Transfer mixture to large bowl, stir in the sifted flour and apple mixture.

4Pour into prepared pan. Bake for about 1¼ hours. Stand 5 minutes before turning on to wire rack to cool.
