Ingredients
Moussaka stacks
- 1 tablespoon oil
- 1 onion, finely chopped
- 3 clove garlic, crushed
- 500 gram beef mince
- 1 cup (250g) tomato passata
- 1 tablespoon chopped oregano, plus leaves, to serve
- cooking oil spray
- 1 medium eggplant, cut lengthways into 8 x 1cm slices
- 2 large potatoes, cooked, peeled, sliced into 5mm rounds
- 1/2 cup (50g) grated mozzarella
Method
Moussaka stacks
-
1Heat oil in a large saucepan on medium.
-
2煮洋葱和大蒜3分钟,直到软。加米ince; cook 5 minutes, stirring, until no longer pink. Stir in passata and oregano. Reduce heat; simmer 10 minutes.
-
3Meanwhile, spray a char-grill or barbecue plate with oil spray; heat on high. Cook eggplant slices 3 minutes each side, until tender. Set aside.
-
4Preheat an oven grill.
-
5Place a slice of eggplant on a baking tray. Top with 2 tablespoons mince, cover with 2 potato rounds, another 2 tablespoons mince and an eggplant slice.
-
6Repeat with remaining ingredients to make four stacks. Top each with mozzarella. Grill 2 minutes, until cheese melts. Scatter with oregano leaves and serve.
Notes
Cook potatoes quickly by wrapping each one in a piece of paper towel and microwaving on high (100%) 8 minutes.
