Ingredients
Mozzarella in a carriage
- 8 thick slices white bread
- 8 large basil leaves
- 125 gram mozzarella cheese, cut into 1cm slices
- 1/2 cup plain flour
- 1/4 cup freshly grated parmesan
- 2 eggs, lightly beaten
- 2 tablespoon vegetable oil
- salt, to serve
Method
Mozzarella in a carriage

1Using an 11cm round fluted pastry cutter, cut bread into rounds. Top 4 rounds with a basil leaf, mozzarella, another basil leaf, then top with remaining bread rounds. Press to secure.

2On a plate, combine flour and parmesan. Pour egg into a shallow bowl. Dip sandwiches into flour mixture, then egg.

3In a large non-stick frying pan, heat oil over moderately high heat. Cook 3 minutes each side or until golden and crisp. Serve sprinkled with salt.
Notes
The Italian name for this tasty treat is Mozzarella in Carrozza. Instead of fresh basil leaves, try spreading bread with bought basil pesto.
