Ingredients
Mushrooms in oil
- 1 kilogram button mushrooms
- 2 1/2 cup (625ml) white wine vinegar
- 1/2 cup (125ml) white wine
- 1 cup water
- 4 bay leaves
- 2 tablespoon salt
- 4 clove garlic, halved
- light olive oil, to cover
Method
Mushrooms in oil

1With a small knife, trim mushroom stems at an angle. In a large saucepan, bring vinegar, wine, water and bay leaves to boil. Add mushrooms and salt. Simmer on low heat 10 minutes. Drain in a colander, reserving bay leaves. Using a spoon to prevent bruising, spread mushrooms stem side down on a dry tea towel to cool.

2Fill sterilised jars with mushrooms, bay leaves and garlic. Cover with oil, pressing down on mushrooms with back of a spoon to release any air. Seal and store in a cool, dark place.
Notes
This is an excellent way to use pearly white button mushrooms when you can find them.
