Mustard sausages with cheesy polenta
- 8 thick lean beef sausages
- 2 tablespoon honey
- 1 tablespoon wholegrain mustard
- 2 cup chicken stock
- 1 1/2 cup frozen peas
- 1 cup instant polenta
- 1 cup coarsely grated tasty cheese
- 1 bunch broccolini
Method
Mustard sausages with cheesy polenta

1Preheat oven to 200°C/180°C fan-forced. Heat a flameproof roasting pan over moderate heat. Add sausages; cook and turn 5 minutes or until browned. Remove from heat. Whisk honey and mustard in a small bowl. Drizzle over sausages; turn to coat. Bake, turning occasionally, 15 minutes or until sausages are caramelised.

2Meanwhile, place stock in a saucepan over moderate heat. Bring to a simmer. Add peas; simmer 2 minutes. Slowly whisk in polenta in a thin steady stream until combined. Whisk and cook 5 minutes or until polenta is thick and comes away from side of pan. Add cheese; stir to combine.

3Cook broccolini in a saucepan of boiling salted water 2 minutes or until tender. Drain. Divide polenta among serving bowls. Top with sausages and broccolini. Serve.
Notes
Mushy pea polenta: smash peas and polenta using a potato masher for this variation.
