Ingredients

No-cook duck salad
  • 1 barbecued duck, meat shredded
  • 1 cucumber, halved, sliced
  • 1 segmented orange
  • 1 pomegranate, halved, seeds removed
  • 2 green onions, finely sliced
  • 1 bunch coriander, leaves picked
  • 1 baby cos lettuce, leaves separated
  • crispy noodles, to sprinkle
Dressing
  • 1/4 cup orange juice
  • 2 tablespoon lime juice
  • 1 tablespoon sweet chilli sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil

Method

No-cook duck salad
  • 1
    In a salad bowl, combine duck, cucumber, orange, pomegranate seeds, onion and coriander.

    To make dressing, whisk all ingredients together in a small jug. Season to taste.

    Drizzle salad with half dressing and gently toss to combine.
  • 4
    Divide lettuce leaves among four serving dishes. Top with salad, sprinkle with noodles and drizzle with remaining dressing.

Notes

You can replace the duck with 2 cooked peking duck breasts or a barbecued chicken.
