Ingredients
No-cook duck salad
- 1 barbecued duck, meat shredded
- 1 cucumber, halved, sliced
- 1 segmented orange
- 1 pomegranate, halved, seeds removed
- 2 green onions, finely sliced
- 1 bunch coriander, leaves picked
- 1 baby cos lettuce, leaves separated
- crispy noodles, to sprinkle
Dressing
- 1/4 cup orange juice
- 2 tablespoon lime juice
- 1 tablespoon sweet chilli sauce
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
Method
No-cook duck salad

1In a salad bowl, combine duck, cucumber, orange, pomegranate seeds, onion and coriander.

2To make dressing, whisk all ingredients together in a small jug. Season to taste.

3Drizzle salad with half dressing and gently toss to combine.

4Divide lettuce leaves among four serving dishes. Top with salad, sprinkle with noodles and drizzle with remaining dressing.
Notes
You can replace the duck with 2 cooked peking duck breasts or a barbecued chicken.
