Nutty biffs
- 115 gram butter
- 125 gram plain flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon mixed spice
- 75 gram sugar
- 1 small egg
- 55 gram walnuts, roughly chopped
- 55 gram dates, finely chopped
- 45 gram dark chocolate chips
- 1/4 teaspoon baking soda
- 1 teaspoon hot water
- 24 walnut halves, to decorate (optional)
- 2 tablespoon demerara sugar, to decorate (optional)
Method

1Preheat the oven to 180°C and line two baking trays with baking paper. Cut the butter into small pieces and bring it to room temperature. Sift together the flour and spices with a pinch of salt.

2Cream the butter and sugar together until mixture is pale and fluffy and then beat in the egg.

3Mix in the sifted dry ingredients and then add the walnuts, dates and chocolate chips.

4Dissolve baking soda in the hot water and tip into the mixture, mixing well.

5Put large teaspoonfuls of the mixture onto the prepared trays, and top each biscuit with a walnut half or a sprinkle of demerara sugar if you wish.

6Bake for 10-15 minutes, rotating trays after 6 minutes. Leave to cool slightly on the trays, then remove to a wire rack to cool completely. Store airtight.
