Olive polenta

Ingredients

Olive polenta
  • 3 cup milk
  • 2 cup chicken stock
  • 2 cup polenta
  • 1 cup extra milk
  • 75 gram pitted kalamata olives, coarsely chopped
  • 1/4 cup parmesan, finely grated

Method

    Bring milk and chicken stock to the boil in a large saucepan. Gradually add polenta, stirring constantly. Reduce heat, simmer, stirring, 10 minutes or until polenta thickens. Stir in an extra milk, olives and parmesan until cheese melts.

    Serve topped with extra finely grated parmesan, if you like.
