Ingredients
Orange and ginger biscotti
- 3 eggs
- 3/4 cup caster sugar
- 1/2 teaspoon vanilla extract
- 1 orange, finely grated zest
- 2 1/2 cup plain flour
- 1/2 teaspoon baking powder
- 1 teaspoon ground ginger
- 1 cup mixed nuts
- 1/2 cup glace ginger
- 100 gram melted dark chocolate
- 100 gram melted white chocolate
Method
Orange and ginger biscotti

1Preheat oven to moderate, 180°C. Lightly grease and line an oven tray with baking paper.

2In a large bowl, using an electric mixer, beat eggs and sugar together until pale and creamy. Beat in vanilla and zest.

3Sift flour, baking powder and ground ginger together onto a piece of baking paper. Fold into butter mixture with nuts and glace ginger.

4Divide mixture in half. Roll into two logs, 5cm thick. Place on tray. Bake 20-25 minutes, until lightly golden. Leave on tray to cool completely (or overnight).

5Cut logs into thin, diagonal slices. Arrange in single layer on tray. Bake 10 minutes on each side. Transfer to a wire rack to cool.

6Dip one end of each biscuit into either dark or white chocolate and allow to set. Serve with coffee.
