Pasta with smoked salmon
This pasta with smoked salmon is a quick and easy go-to dish when you're after something speedy. Smoked salmon off-cuts are inexpensive and sometimes available from seafood stores, some supermarkets and delicatessens.

Ingredients
Pasta with smoked salmon
- 500 gram casarecce or spiral pasta
- 1 cup (250ml) fish stock
- 300 millilitre cream
- 200 gram smoked salmon off-cuts or strips, chopped coarsely
- 4 green onions, sliced thinly
- 2 tablespoon finely chopped fresh dill
- 1 teaspoon finely grated lemon rind
- 2 tablespoon lemon juice, optional
Method
Pasta with smoked salmon

1Cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.

2Meanwhile, place stock and cream in medium saucepan; bring to a boil. Reduce heat; simmer, uncovered, about 5 minutes or until thickened slightly.

3Combine pasta with salmon, onion, dill, rind and cream mixture in large bowl; add juice and season to taste with freshly ground black pepper.
Notes
This recipe is best made just before serving. SERVING SUGGESTION Serve with a green salad, if desired.
