Pasta with tuna and breadcrumbs
  • 6 slice wholemeal bread
  • 1 425 gram can tuna in oil
  • 2 clove garlic, crushed
  • 1/4 cup chopped oregano
  • 1/2 cup chopped parsley
  • grated rind and juice of 1 lemon
  • 400 gram spaghetti

Method

    Remove crusts bread and process until finely chopped. Drain tuna. Reserve oil. Heat half oil in a frying pan on medium. Cook breadcrumbs and garlic cloves 3-5 minutes, until golden. Stir in parsley, oregano and lemon rind. Season to taste.

    Cook spaghetti according to directions. Drain. Toss with crumbs, tuna, lemon juice and remaining oil to serve.
