Ingredients
Peach granita
- 3 cup water
- 1 cup sugar
- 4 peaches, peeled, stoned and chopped
- peach slices and mint leaves
Method
Peach granita

1Combine water and sugar in saucepan on low, stirring until sugar dissolve. Bring to the boil. Reduce heat and simmer, without stirring for 10 minutes. Set aside and cool to room temperature.

2Place peaches and syrup in a food processor or blender. Process until smooth, Strain mixture into bowl.

3Cover and freeze mixture for 3 hours until just set.

4Break up ice crystals with a fork. Freeze for 30 minutes until firm. Spoon into bowls. Top with peach slices and mint
