Peach granita
Fresh, fruity and frozen, this delightful peach granita is wonderful served as dessert on a hot Summer's afternoon.

Ingredients
Peach granita
- 3 cup water
- 1 cup sugar
- 4 peaches, peeled, stoned, chopped
- extra peach slices, to serve
- mint leaves, to serve
Method
Peach granita

1Combine water and sugar in medium saucepan. Stir over low heat until sugar dissolves. Bring to the boil. Reduce heat and simmer, without stirring, for 10 minutes. Set aside and cool to room temperature.

2Place peaches and sugar syrup in a food processor or blender. Process until smooth. Strain mixture into a bowl.

3Cover and freeze for 3 hours, or until mixture is just set.

4Using a fork, break up ice crystals. Freeze for further 30 minutes, until firm. Spoon mixture into serving bowls. Top with peach slices and mint leaves.
Notes
Peel peaches (and other stone fruit) by piercing the skin in a couple of places. Place in a bowl. Cover with boiling water for 30 seconds to 1 minute. Drain, and then rinse in cold water. The skin will peel away easily.
