Ingredients
Peach ice tea granita
- 1 litre (4 cups) peach-flavoured ice tea
- 2/3 cup caster sugar
- 825 gram fresh peach, sliced (could use canned peaches in syrup, drained)
Method
Peach ice tea granita

1Combine tea and sugar in a medium saucepan over low heat. Cook and stir for 2 minutes or until sugar dissolves.

2Pour tea mixture into a 23cm (base measurement) square cake pan; cool. Freeze for 6 hours or until firm.

3Spoon peaches into serving bowls. Using a fork. scrape granita into flakes; spoon over peaches. Serve at once.
Notes
It is best to make granita within 2 days of serving. Flake just before serving.
