Pear and honey fritter cakes
- 1 cup self-raising flour
- 1/2 cup sugar
- 1 cup butter milk
- 1 egg
- 1 pear, cored, peeled, grated
- 30 gram butter
- 2 tablespoon honey
- 2 pear, thinly sliced
- natural yoghurt and a drizzle of honey
Method
Pear and honey fritter cakes

1Sift self-raising flour into a large bowl. Stir in sugar and make a well in the centre. Gradually whisk in combined butter milk, egg and grated pear until smooth.

2Melt butter in a large frying pan on medium. Stir in honey and bring to simmer. Add half sliced pear and cook 3-4 minutes each side, until caramelised lightly.

3Brush a large hot frying pan with a little melted butter. Working in batches; drop 2 tablespoonfuls of mixture into pan for each fritter. Cook 3-4 minutes until bubbles appear on the surface and the underside is golden. Turn and cook for a further 1-2 minutes until puffed and cooked through.

4Serve topped with remaining pear slices, natural yoghurt and a drizzle of honey.
