Ingredients
Pear cheesecake crepes
- 2 cup desiccated coconut
- 395 gram can sweetened condensed milk
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 1 lemon, finely grated zest
- 1 lime, finely grated zest
- 1/2 cup thickened cream
- 425 gram can pears, drained, chopped
- 400 gram packet frozen french crepes
- icing sugar, to dust
Method
Pear cheesecake crepes

1In a large bowl, combine coconut, condensed milk and citrus juice and zest, stirring, until mixture thickens. Fold through cream, then the pear.

2Warm the crepes following packet directions. Spoon an even amount of pear mixture onto each crepe. Fold into quarters and serve dusted with icing sugar.
