Pecan coffee slice
Coffee fans will love the flavour of this sweet nutty treat.

Ingredients
Pecan coffee slice
- 100 gram chopped butter
- 1 tablespoon instant coffee
- 395 gram can condensed milk
- 250 gram packet finely crushed granita biscuits
- 1 1/2 cup finely chopped toasted pecans
- 1/2 cup sifted plain flour
Icing
- 1 tablespoon instant coffee
- 1 tablespoon just-boiled water
- 1 1/4 cup sifted icing sugar
- 50 gram melted butter
- 1/2 teaspoon vanilla
Method

1Preheat oven to 180°C. Lightly grease and line a 30cm x 20cm slice pan with baking paper, extending 2cm above long edges.

2In a medium saucepan, combine butter and coffee, stirring until coffee dissolves.

3Add condensed milk, stirring over low heat until warm and smooth. Remove from heat.

4In a large bowl, combine biscuits, pecans and flour. Add condensed milk mixture. Mix well until combined. Press firmly into pan.

5Bake 15-20 minutes, until golden and firm around the edges. Allow to cool in pan 10 minutes before turning out onto a wire rack to cool completely.

6To make icing, combine coffee and water, stirring to dissolve. In a bowl, combine all remaining ingredients and coffee mixture, beating until smooth. Spread over cooled slice. Cut into small squares to serve.
Notes
If you prefer firmer icing, add extra icing sugar until desired consistency is achieved.
