Penne with meatballs

Ingredients

  • 70 millilitre bottle tomato pasta sauce
  • 1/2 cup white wine
  • 1/2 cup water
  • 1/3 cup char-grilled mixed vegetables, drained, chopped
  • 1/2 teaspoon dried mixed herbs
  • 450 gram frozen meatballs (store bought or home-made)
  • 400 gram penne pasta
  • 1/4 cup roughly chopped parsley
  • 1/4 cup shaved parmesan
  • garlic bread

Method

    In a large frying pan, combine pasta sauce with wine, water, char-grilled vegetables and mixed herbs. Bring to a simmer on a medium heat. Season to taste.

    Stir in meatballs. Simmer for 10-15 minutes, stirring occasionally.

    Meanwhile, cook pasta in a large saucepan of boiling salted water following packet instructions. Drain well and place in a large serving bowl.

    Toss pasta through sauce with parsley. Serve topped with parmesan, and accompany with garlic bread, if you like.
