Persimmon syrup
Make your own syrups for use in cocktails or as a refreshing mixer with soda.

Ingredients
Persimmon syrup
- 1/2 fresh persimmon, peeled and cut into 1cm cubes
- 200 millilitre sugar syrup (see tip)
Method

1Simmer the chopped persimmon and sugar syrup for 10 minutes until stewed.

2Allow mixture to cool and pass through a sieve. Store persimmon syrup in fridge until ready to use.
Notes
To make sugar syrup, boil a 1:1 mixture of water and sugar in a pot until sugar dissolves. Chill in fridge until ready to use.
