Persimmon syrup

Make your own syrups for use in cocktails or as a refreshing mixer with soda.

Persimmon syrup

Ingredients

Persimmon syrup
  • 1/2 fresh persimmon, peeled and cut into 1cm cubes
  • 200 millilitre sugar syrup (see tip)

Method

    Simmer the chopped persimmon and sugar syrup for 10 minutes until stewed.
  • 2
    Allow mixture to cool and pass through a sieve. Store persimmon syrup in fridge until ready to use.

Notes

To make sugar syrup, boil a 1:1 mixture of water and sugar in a pot until sugar dissolves. Chill in fridge until ready to use.
