Ingredients
Pesto zucchini pasta
- 200 gram woolworths select large pasta shells
- 1 tablespoon olive oil
- 2 zucchini, sliced into ribbons
- 100 gram feta, crumbled
- finely grated zest of 1 lemon
- 1/4 cup mint leaves, plus extra to serve

- 1 cup mint leaves, plus extra to serve
- 1/3 cup woolworths select blanched almonds, roasted
- 1/3 cup olive oil
- 1/4 gram grated parmesan
- 1 clove garlic, peeled
Method
Pesto zucchini pasta

1Cook pasta following the packet instructions; drain. Return to pan and cover to keep warm.

2Make pesto: process all the ingredients until finely chopped.

3Heat oil in a large frying pan on high. Sauté zucchini for 1-2 minutes until tender. Set aside.

4Toss zucchini, pesto, feta, zest and mint through. Serve with mint leaves.
