Petits pots de creme
- 1 cup (250ml) cream
- 1 cup (250ml) milk
- 1 teaspoon vanilla bean paste
- 1/4 cup (55g) caster sugar
- 4 egg yolks
- 1 egg
- strawberries, to serve, if liked
Method

1Preheat oven to 150°C.

2Heat cream, milk, vanilla paste and sugar in a saucepan on medium, until mixture is just simmering. Remove from heat, cover and set aside for 15 minutes to infuse.

3Lightly whisk egg yolks and egg in a bowl to combine. Add cream mixture, whisking continuously. Strain into a jug.

4Pour into six 1/2-cup ovenproof ramekins. Place ramekins in a baking dish and add enough boiling water to come halfway up the side of the ramekins. Cover pan with baking paper. Bake for 12 to 20 minutes, until just set. Turn off oven. Cool pots for 30 minutes in oven. Remove, cool, then serve with strawberries, if liked.
