Pineapple and prawn noodles with chilli lime dressing
This pineapple, prawn and noodle dish wraps up summer in one dish. No cooking required - just soak the noodles and away you go!

Ingredients
Pineapple and prawn noodles
- 250 gram rice stick noodles
- 500 gram cooked prawns, shelled, deveined
- 1/2 fresh pineapple, peeled, cored, chopped
- 1/2 punnet cherry tomatoes, halved
- 1/2 cup coriander leaves
- 3 green onions, sliced
Chilli lime dressing
- 1/4 cup lime juice
- 2 tablespoon sweet chilli sauce
- 1 tablespoon sesame oil
- 2 teaspoon fish sauce
- 2 teaspoon brown sugar
- 2 garlic cloves, crushed
- 1 red chilli, sliced
- 1 teaspoon finely grated ginger
Method
Pineapple and prawn noodles

1Place rice stick noodles in a large bowl and cover with boiling water. Soak for 5-8 minutes until tender. Drain well.

2Transfer noodles to a serving bowl and add all remaining salad ingredients. Mix well.

3In a jug whisk together all chilli lime dressing ingredients. Toss dressing through salad just before serving.
