Pineapple and prawn noodles with chilli lime dressing

This pineapple, prawn and noodle dish wraps up summer in one dish. No cooking required - just soak the noodles and away you go!

Ingredients

Pineapple and prawn noodles
  • 250 gram rice stick noodles
  • 500 gram cooked prawns, shelled, deveined
  • 1/2 fresh pineapple, peeled, cored, chopped
  • 1/2 punnet cherry tomatoes, halved
  • 1/2 cup coriander leaves
  • 3 green onions, sliced
Chilli lime dressing
  • 1/4 cup lime juice
  • 2 tablespoon sweet chilli sauce
  • 1 tablespoon sesame oil
  • 2 teaspoon fish sauce
  • 2 teaspoon brown sugar
  • 2 garlic cloves, crushed
  • 1 red chilli, sliced
  • 1 teaspoon finely grated ginger

Method

Pineapple and prawn noodles
  • 1
    Place rice stick noodles in a large bowl and cover with boiling water. Soak for 5-8 minutes until tender. Drain well.

    Transfer noodles to a serving bowl and add all remaining salad ingredients. Mix well.

    In a jug whisk together all chilli lime dressing ingredients. Toss dressing through salad just before serving.
