Ingredients
Pineapple and walnut cake
- 2 cup self-raising flour
- 1 cup caster sugar
- 440 gram can crushed pineapple in juice
- 1 cup walnut halves, roughly chopped
- icing sugar, to dust
Method
Pineapple and walnut cake

1Preheat oven to moderate, 180°C. Lightly grease and line a 22cm round cake pan with baking paper.

2Sift flour into a medium bowl and stir in sugar. Lightly stir in pineapple with juice and walnuts, until well combined. Pour mixture into the pan, smoothing surface.

3Bake 40-45 minutes, until a skewer inserted in the centre comes out clean.

4Cool in pan 5 minutes before transferring to a wire rack to cool completely. Dust with icing sugar.

5Serve cake with thick custard, if liked.
