Ingredients
Pinwheel sandwiches
- 1 large avocado, peeled, stone removed
- 150 gram reduced-fat spreadable cream cheese at room temperature
- 1 tablespoon lemon juice
- 1 loaf unsliced white bread
- 200 gram shaved leg ham
- 1 large carrot, finely grated
Method
Pinwheel sandwiches

1Mash avocado, cream cheese and juice in a large bowl until smooth. Using a large serrated knife, remove crust from bread. Cut bread, lengthwise. into 4 equal slices. Using a rolling pin flatten each slice to about 5mm thick.

2To make 5 pinwheels, spread a piece of bread with a quarter of the avocado mixture, leaving a 1cm border. Top with a quarter of the ham, in a thin layer, overlapping ham slightiy. Top with a quarter of the carrot, in a thin layer. Roll up to enclose filling. Cut into 5 equal slices. Repeat with remaining bread and ingredients. Serve.

Pinwheels are a great idea for kids school lunchboxes.
