Pizza parcel
We love the combination of spicy pepperoni and mushroom in these delicious pizza parcels by recipes+, but feel free to experiment with a variety of your favourite pizza ingredient toppings.

Ingredients
Pizza parcel
- 2 tablespoon vegetable or olive oil
- 200 gram button mushrooms, thickly sliced
- 150 gram sliced pepperoni, chopped
- 200 gram bacon rashers, rind removed, chopped
- 1 red capsicum, thinly sliced
- 1 cup grated mozzarella cheese
- 1/2 cup pitted kalamata olives, halved
- 2 teaspoon dried oregano leaves
- 1 store-bought pizza dough
- 1/4 cup tomato paste
- 1 egg, lightly whisked
- salad leaves, to serve
Method

1Heat oil in a frying pan over moderately high heat. Add mushroom, pepperoni, bacon and capsicum; cook and stir for 5 minutes or until soft. Remove pan from heat. Cool. Stir in mozzarella, olives and half the oregano.

2Preheat oven to 230°C (210°C fan-forced). Line a large baking tray with baking paper.

3Roll out dough on a large piece of baking paper to a 42x25cm rectangle. Spread tomato paste over dough. Place filling along the centre of rectangle. Fold short ends over filling. Fold long sides over, stretching dough to cover filling completely. Pinch edges to seal.

4Place prepared tray with baking paper upside down on top of dough, then carefully invert parcel onto tray, seam-side down. Brush with egg. Sprinkle with remaining oregano. Bake for 20 minutes or until golden and cooked. Cut parcel into 4 pieces. Serve with salad.
Notes
Replace half the pepperoni with diced ham or cabanossi. Add drained pineapple pieces or any favourite pizza toppings you like.
