Ingredients

Plum and almond slice
  • 125 gram butter, chopped, at room temperature
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/4 cup ground almonds
  • 1 cup self-raising flour, sifted
  • 7 plums, stoned, quartered
  • 1 tablespoon demerara sugar
  • thick cream, to serve

Method

Plum and almond slice

    Preheat oven to moderate, 180°C. Lightly grease an 18 x 28cm slice pan. Line with baking paper, extending 2cm over the two long sides.

    In a large bowl, using an electric mixer, beat the butter, sugar and vanilla together until pale and creamy. Add eggs, one at a time, beating well after each addition.
