Ingredients
Plum and almond slice
- 125 gram butter, chopped, at room temperature
- 1/2 cup caster sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/4 cup ground almonds
- 1 cup self-raising flour, sifted
- 7 plums, stoned, quartered
- 1 tablespoon demerara sugar
- thick cream, to serve
Method
Plum and almond slice

1Preheat oven to moderate, 180°C. Lightly grease an 18 x 28cm slice pan. Line with baking paper, extending 2cm over the two long sides.

2In a large bowl, using an electric mixer, beat the butter, sugar and vanilla together until pale and creamy. Add eggs, one at a time, beating well after each addition.
