Poached mandarin parfaits
- 1/2 cup honey
- 1 cinnamon stick
- 6 mandarins, peeled, white pith removed, segmented
- 1 tablespoon lemon juice

- 2 tablespoon unsalted pistachio kernels, chopped
Method
Poached mandarin parfaits

1Place honey, 2 cups water and the cinnamon in a saucepan over high heat. Bring to the boil.

2Reduce heat to moderate. Simmer for 4 minutes or until reduced slightly. Add mandarin; simmer for 2 minutes or until soft. Stir in juice. Cool. Strain; discard cooking liquid or chill for later use.

3Divide half the shortbread among 6 x 1-cup serving glasses. Top with half the yogurt. Layer with remaining shortbread, then half the mandarin and remaining yogurt.

4Top with the remaining mandarin. Sprinkle with pistachio. Serve.
Notes
Place biscuits in a plastic bag, then use a rolling pin, meat mallet or base of a flying pan to crush them.
