Polenta orange biscuits
  • 125 gram butter, softened
  • 2 teaspoon finely grated orange rind
  • 2/3 cup (110g) icing sugar
  • 1/3 cup (55g) polenta
  • 1 cup (150g) plain (all-purpose) flour

Method

    Preheat oven to 180°C/350°F. Grease oven trays; line with baking paper.

    Beat butter, rind and sifted icing sugar in small bowl with electric mixer until just combined; stir in polenta and sifted flour.

    Shape mixture into 30cm rectangular log; cut into 1cm slices.

    Place slices on trays 2cm apart. Bake about 15 minutes.

    Stand on trays 5 minutes; transfer to wire racks to cool.
