- 340 gram packet buttercake mix
Butter cream
- 200 gram butter, softened
- 2 1/4 cup (360g) icing sugar
- 3 tablespoon milk
- green food colouring
Decorations
- 2 x 200g packets chocolate finger biscuits
- 1/2 cup (45g) desiccated coconut
- green colouring
- 2 tablespoon shredded coconut
- 2 toy horses
- 2 toy riders
- 1 tablespoon shredded coconut, extra, toasted
Method

1Preheat oven to 180°C (160°C fan-forced). Grease and line deep 22cm-round cake pan.

2Make cake according to directions on packet, pour into pan; bake in moderate oven about 30 minutes. Stand cake in pan 5 minutes; turn onto wire rack to cool. Using serrated knife, level cake top.

3Meanwhile, to make butter cream, beat butter in small bowl with electric mixer until as white as possible. Gradually beat in half of the icing sugar, milk, then remaining icing sugar. Tint butter cream with green food colouring.

4Place cake on 30cm round board, cut-side down. Spread butter cream all over cake.

5Position one chocolate finger along base of cake, position one finger diagonally. Cut another finger in half and position to make gate. Position remaining chocolate fingers around side of cake.

6Place desiccated coconut and green colouring in small plastic bag; rub until coconut is evenly coloured. Sprinkle over cake.

7Place shredded coconut and green colouring in small plastic bag; rub until coconut is evenly coloured. Sprinkle around top edge of cake. Position horses and dolls on cake. Sprinkle toasted coconut in front of one horse.
