Pork and potato with apple salsa
Pork and apple have been paired together for centuries! This simple recipe replaces traditional apple sauce with a fresh and crunchy salsa.

Ingredients
Pork and potato with apple salsa
- 4 medium floury potatoes
- 2 tablespoon vegetable or olive oil
- 4 125g pork loin medallions
- 2 large red-skinned apples, unpeeled, coarsely chopped
- 3/4 cup chopped flat-leaf parsley
- 1/4 cup slivered almonds, toasted
- 1 teaspoon finely grated orange zest
- 2 tablespoon freshly squeezed orange juice

2Preheat a char-grill pan or barbecue plate over moderately high heat. Add potato and pork; cook and turn for 6-8 minutes or until potato is browned and pork is cooked.

3To make salsa, combine apple, parsley, almonds, zest, juice and remaining oil in a medium bowl. Season. Serve pork and potato with salsa.
Notes
Use pork leg steaks or chops. Use pears instead of apples.
