Pork and potato with apple salsa

Pork and apple have been paired together for centuries! This simple recipe replaces traditional apple sauce with a fresh and crunchy salsa.

Ingredients

Pork and potato with apple salsa
  • 4 medium floury potatoes
  • 2 tablespoon vegetable or olive oil
  • 4 125g pork loin medallions
  • 2 large red-skinned apples, unpeeled, coarsely chopped
  • 3/4 cup chopped flat-leaf parsley
  • 1/4 cup slivered almonds, toasted
  • 1 teaspoon finely grated orange zest
  • 2 tablespoon freshly squeezed orange juice

    使用叉子,戳破土豆;在一个地方heatproof plate. Microwave on High (100%) for 3-4 minutes or until just tender. Transfer to a chopping board. When cool enough to handle, thickly slice potatoes; place in a medium heatproof bowl. Season. Add half the oil; toss to coat.

    Preheat a char-grill pan or barbecue plate over moderately high heat. Add potato and pork; cook and turn for 6-8 minutes or until potato is browned and pork is cooked.

    To make salsa, combine apple, parsley, almonds, zest, juice and remaining oil in a medium bowl. Season. Serve pork and potato with salsa.

Notes

Use pork leg steaks or chops. Use pears instead of apples.
