Ingredients
Pork wellington
- 1 tablespoon vegetable or olive oil
- 4 125 gram pork leg steaks
- 25 gram butter
- 1 small brown onion, finely chopped
- 150 gram button mushrooms, finely chopped
- 2 tablespoon chives, finely chopped
- 2 sheets frozen puff pastry, thawed
- 1 egg, lightly beaten
- roast veggies, to serve
Method

1Preheat oven to 220°C/200°C fan forced. Line a baking tray with baking paper.

3Melt butter in pan. Cook and stir onion and mushrooms for 3-5 minutes or until tender. Stir in chives. Cool.

4Cut each pastry sheet in half. For each Wellington, top half the pork with mushroom mixture. Fold pork to enclose filling. Place pork on pastry. Fold pastry to enclose pork and form a rectangular parcel.

5Place parcel on prepared tray; brush with egg. Bake for 20 minutes or until golden and cooked.

6Serve Pork Wellingtons with roast veggies.
Notes
If steaks are thick, gently pound to 5mm.
